For those of you that like to bake, I have two recipes to share.
WARNING: The first recipe is a delicious, healthy cookie. The second is equally delicious but not so healthy, definitely skip if you are dieting!
LACTATION COOKIES
If you aren’t lactating you can make up a different name for them…like yumyum health cookies! This are said to increase milk supply in lactating women and they sure are a good snack to have handy. Don’t be scared though if you aren’t nursing or are a man…they do not cause lactation……or do they???
1 C butter
1 C sugar
1 C brown sugar
4 Tbs water
2 Tbs flaxseed meal (no subs)
2 Lg eggs
1 tsp vanilla
2 C flour
1 tsp baking soda
1 tsp salt
3 C Thick cut oats
1 C Chocolate chips (recommend Ghiradelli)
2 Tbs Brewers Yeast (no substitutions)
Optional: You may add nuts and/or peanut butter if you wish!
Preheat oven at 375.
Mix flaxseed meal and water, set aside 3-5 minutes.
Cream butter and sugar.
Add eggs.
Stir flaxseed mix into butter mix and add vanilla.
Beat until well blended.
Sift together flour, baking soda, salt and brewer’s yeast
Add dry mix to butter mix.
Stir in the oats and then the choc chips.
Drop on parchment paper on baking sheet. (This will help soak up some of the oil from the cookies, but is not necessary)
Bake 8-12 minutes.
SUGAR COOKIE PUFF CAKES
This recipe was sent to me by my brother Tommy, I believe they are his creation.
1c unsalted softened butter
2c sugar
2 eggs
5c flour
1tsp baking soda
1/2tsp baking powder
1/2c milk
1/2tsp salt
1/2tsp vanilla extract
Preheat oven to 375.
Cream butter and sugar, add eggs and vanilla set aside in a bowl.
Mix flour, soda, powder, and salt in another bowl.
Slowly add flour mix to eggs and butter, followed by milk. Mix thoroughly.
Roll into small/med size balls and coat in extra sugar. Place on greased cookie sheet and flatten slightly
Cook for 12mins. ENJOY!
